COUNTRY COFFEE was a pop-up coffee spot that opened at the Hawaii County Economic Opportunity Council (HCEOC) across from Rainbow Falls. Established in 2013 Country Coffee opened on 22 June 2013 and closed on 04 April 2014 at 4:04 pm.
Their theme "Coffee and More Gifts of Hawai'i" echoed previous iterations of the shop location that had sold local crafts and gifts aimed at tourists visiting the Rainbow Falls. Their idea being "Specialty Foods make the best gifts." Country Coffee was never designed to be a permanent store, and did not strive to be a touristy place despite the popularity of Rainbow Falls as a mandatory stop for all the tour buses. Instead COUNTRY COFFEE rejuvenated the location at HCEOC, contributing landscaping and added a new layer of charm, making it a destination for people who wanted the so-called "third wave" of coffee. Next door was/is the membership based Hawaii Tech Works which opened in July 2013.
At COUNTRY COFFEE both coffee and tea were mico-brewed and used locally, sustainably sourced ingredients to the fullest extent possible. The purpose was to demonstrate from root-to-cup, of farm-to-cup, and make single-origin and specialty coffees available at mid-market prices, thereby going above and beyond what corporate mid-market was offering up at that time.
